Thinai Payasam Recipe | Foxtail millet Recipe

Thinai is one of the millets varieties and it can be prepared in many different ways. I have made payasam using this foxtail millet. For this kheer recipe, I have used jaggery instead of sugar. Adding jaggery makes this recipe even more healthy and tasty. It can be served either hot or cold. Perfect and healthy dessert option.

Ingredients

Thinai Arisi - 1/4 Cup
Powdered Jaggery - 1/4 Cup + 1 Tablespoon
Ghee - 2 Teaspoons
Cashew - 10 Nos
Cardamom Powder - A Pinch
Milk- 1/2 Cup
Grated Coconut - 2 Tablespoons


Method

Heat a pan and add 2 teaspoons of ghee. Fry the cashews till it turns into light golden brown colour and keep it aside.

In the same pan, add the thinai and fry it for a minute till you get a nice aroma.Add around 1- 1.25 cups of water and cook it for 10 minutes or till it becomes soft. Transfer it to a bowl.

In the same pan, add powdered jaggery. Add water till it gets soaked. Mix well and bring it to boil. Add cooked thinai to the boiling mixture and give it a mix.

Add powdered cardamom, grated coconut. Mix well and turn off the flame.

Add boiled and cooled milk, little by little. Make sure you keep stirring till all the milk is added. Adjust the quantity of milk according to your required consistency.

Finally add the fried cashew to the mixture.
