Vendakkai Poriyal Recipe | Ladies Finger Poriyal Recipe

Ladiesfinger recipe is our all time favorite. Okra has got lot of health benefits and there are many different okra recipes. This simple ladiesfinger stirfry is easy to make and can be served along with sambar rice adn curd rice. I would prefer not to fry the okra for a longtime since it will loose its nutritional value. So its always better not to overcook vendakkai.

Ingredients

Ladies Finger / Okra/ Vendaikai - 250 Grams
Shallots -  8-10 Nos (Chopped)
Green Chilles - 1 No (Slit Lengthwise)
Curry leaves - A Sprig
Mustard seeds - 1/4 Teaspoon
Urad dhal - 1/4 Teaspoon
Oil - 1 tablespoon
Salt - To Taste



Preparation Method

Wash the ladiesfinger and pat dry them. Cut them into small pieces and spread it on a big bowl. Rest it to dry for one hour.

Heat a kadai and add oil. Once the oil is hot, add mustard seeds, urad dhal and let it splutter.

Add curry leaves.

Add green chilly and half of the chopped shallots and fry it for a while.

Add the chopped ladies finger and give it a mix.

Let it cook for few minutes in medium flame. Mix it now and then.

when the ladies finger is half cooked, add the required salt and mix well. 

Cook it for another 3 minutes and finally add rest of the chopped shallots and cook for a minute. Turn off the flame.
