Instant Mango Pickle | ஊறுகாய் | How to make mango pickle

This raw mango pickle recipe can be made in a short time. This pickle goes well with curd rice, sambar rice and dhal rice.

Ingredients


Raw Mango - 1 No
Chilli Powder - 1 Teaspoon
Kashmiri Chilli Powder - 1 Teaspoon (Optional)
Mustard Seeds - 1 Teaspoon
Asafoetida - 1/4 Teaspoon
Salt - To Taste
Sesame Oil - 1 Tablespoon

Method

Cut the mango into small cube sized pieces.
Add chilli powder, kashmiri chilli powder and salt to the cut mango pieces and mix well.
Heat a kadai and add oil.
Once it is hot, add mustard seeds and allow it to splutter
Add asafoetida and mix for 2 seconds.
Add the mango pieces and start mixing.
Cook for less than 5 minutes by mixing it inbetween.
Turn off the heat. 
Allow it to cool down completely and transfer it to a container.
