Ingredients
Karunaikilangu - 250 grams
Shallots - 10 nos
Garlic - 2 Nos
Tomato - 1 No
Turmeric Powder - 1/2 Teaspoon
Chilli Powder - 2 Teaspoon
Coriander Powder - 1 Tablespoon
Cumin seeds - 1/2 Teaspoon
Tamarind Extract - 2 Tablespoons
Red Chillies - 2 nos
Curry Leaves - Little
Mustard Seeds - 1/2 Teaspoon
Urad Dhal - 1/2 Teaspoon
Oil - As Required
Salt - As Required
Method
Karunaikizhangu will have some mud on it. Soak the karunaikizhangu for 30 minutes. Wash off the mud and keep it ready.
Add the washed karunaikizhangu in a pressure cooker and add water till it gets soaked. pressure cook for 4 - 5 whistles.
Once it is cooked till soft, peel off the skin and cut them into pieces and mash it well.
Add little water, mix well and bring it to a consistency of dosa batter
Heat a kadai and add oil. Once it is hot, add mustard seeds
After it splutters, add urad dhal and fry till it turns into light golden brown colour.
Add cumin seeds, curry leaves,red chillies,
Add chopped garlic, chopped shallots and saute for a minute
Add chopped tomatoes, required salt and mix well.
Add turmeric powder, chilli powder and coriander powder. Give it a mix
Sprinkle some water and cook till the raw smell goes off
Add the mashed karunaikizhangu and mix well
Add tamarind extract and bring it to boil.
Close it and cook for 5 minutes, till it thickens up.
