Murungai Keerai Poriyal is a very tasty stir fry recipe that is served along with rice. This spinach recipe is packed full of nutrition and its rich in iron.

Ingredients
Drumstick Leaves - 1 Bunch
Shallots - 10 Nos
Garlic - 1 No
Grated Coconut - 2 Tablespoons
Red Chilles - 2 Nos
Mustard Seeds - 1/2 Teaspoon
Urad Dhal - 1/4 Teaspoon
Cumin Seeds - 1/2 Teaspoon
Ghee - 1 Tablespoon
Salt - To Taste
Method
Wash the drumstick leaves and keep it ready.
Heat a kadai and add ghee. When it turns hot, add mustard seeds, urad dhal and allow it to splutter.
Add red chillies, chopped garlic, chopped shallots and fry for few seconds.
Drain the drumstick leaves and add it to the kadai.
Mix well and cook for 5 minutes. Give it a stir inbetween.
If required, sprinkle some water in between till it gets cooked.
When its half cooked, add required salt and mix well.
Finally add crushed cumin seeds and grated coconut. Turn off the heat.
Mix well and serve it.
Grated coconut is optional. This can be ignored if preferred.
